Homemade Roasted Salsa
THE BEST Homemade Salsa. I truly will never buy store bought salsa ever again. I can’t believe how insanely delicious this turned out and how easy to was to make! Here is everything I used:
Ingredients:
• 5 big tomatoes, cut into fourths
• 1 yellow onion, cut into fourths
• 2 garlic cloves
• 3 jalapeños or chili peppers (I used chili peppers because jalapeños are hard to find in Sweden and I LOVED the recipe so I suggest chili peppers)
• A little drizzle of good quality extra virgin olive oil (optional but def recommend)
One lime & Half of a lemon + salt (used at the end)
Directions:
Line a baking tray with parchment paper and place the veggies, drizzle the olive oil on top. Place the tray in the middle rack and broil in the oven until the veggies are lightly charred. I broiled for about 10-15 min (but our little oven is super fast). If they are roasted too fast - give the mixture a little stir so all areas of the veggies get roasted.
Once cooked, put everything in a food processor or blender and pulse blend.
Then add in salt (I use a lot 😍) and juice of one lime and half a lemon.
I usually store in a glass jar and serve it the best day because the flavors have a chance to really blend together.
